Is there a way to adjust the attack/release of the actually sounds?

Yes the filter envelope is just one of the envelopes. If you look over to the filter section there is a 1 and 2. 1 will say filter and 2 will say amp, there will be a button under it that will change the selected envelope from 1. filter(which you are on right now) to 2. amp which is what you want.
