One thing that struggle me is that I can't find a (practical) way to know the knobs position for the preset sound that I choose as starting point for create new sounds.

What I'm doing now, when I choose a preset sound that I like, is to move all the knobs to have the minilogue configured correctly.
From there I start moving the knobs to modifying the preset and create my sound.

Are there better ways? Am I missing something?
Maybe a document that shows all the values for the preset sounds could help.

Thank you.
I can't read from your description whether you've enabled showing the parameter values, if not:

the parameter values are shown if you have the "Parameter Disp" setting set to "All" in the "Global" menu. Turn the dial, and it shows arrows for up/down or "*" when you've got the dial turned to the value of that parameter in the current preset.
