How can I use my KORG PA2X Pro as a midi keyboard?
and in which mode "Style play or Sound mode"?

What are you wanting to do with it?
Connect to PC?
Use as MIDI keyboard to play other keyboards/modules?
In SOUND mode you will be playing on a single MIDI channel
In STYLE MODE, when playing a STYLE, you will playing on several MIDI channels (different channels for each of the STYLE parts - ACCs, drums, perch, UPPER 1/2/3 etc..)
MIDI channels are selectable on the PA2XPro so you have completel flexibility in matching your MIDI channels to the external device/PC etc…
As ProudM3 says, if you are connecting to a PC/Mac then you will need to install the MIDI drivers on the PC/Mac first - these can be freely downloaded from:-

Pa2x sends Midi-commands via Midi-Out in Style-Mode and also in Songplay-Mode. To be sent Midi-Out is to configure what tracks of Pa2x should be assigned to Midi-Channels.
iPad needs an application to receive Midi-commands via iRig. Whatever iPad-Midi-application one uses, there also will be settings how to assign and how to use Midi-In-channels.
Now if the application of your iPad receive Midi-Commands, then that commands are used from the application for which it is made as you adviced to be used.
Configuration with that two Midi-Devices is: Pa2x = Midi-Sender, iPad = Midi-Receiver
