Open Sequencer , load your midi, do change and save as new file.
Go back to Song Play mode and load new file, should be already however you like. :)

Nemik is right - changing instruments and volume while in Sequencer Mode will work for most midi files once re-saved but it wont work for all of them.
Some midi files have program changes and volume changes within the Track that will overwrite any changes you make.
To fix these you need to edit out these events. You can find them using the Edit Event then the Filter Tab.

Thanks guy's for your replies, I have done as you say but when I make changes
I cant see any setting for SAVE. I see there is execute but that doesn't seem to do anything! As Reuben suggested I did go into the events to change the volume which works but I cant see anything there to change the instrument type!

The normal way to change an Instrument is to just touch the icon twice and navigate to a new instrument.
You save changes by using the drop down menu (the small arrow in top right-hand corner).
If an instrument changes back after you have changed it you will need to delete the program change event causing this. Play the midi file and watch for the measure/bar that the change occurs in then go to edit event (filter out everything except program changes) and scroll to the measure where the event occurs.
Cheers,
John
