can I when I release a note make kronos fade out a played sample??
Yeah, this is called release.
Aftertouch is a controller like velocity where you can control a parameter by how hard you are pressing (holding) the keys.
If you want a sound to fade out more when you let go, you need to turn up the Amp Envelope Generator (Amp EG) Release time parameter.
Often this is mapped to something on the control surface, depending on what mode you are in.
