Note not sustaining very long?
I am playing a song and I have created a simple combi made up of intimate strings and m3 piano. The start of the song I press the first A and keep my foot on the sustain pedal whilst playing a piano part higher up. I noticed that after 5 seconds or so the low string sound goes, despite me having my foot still on the sustain pedal? Is there any way to keep the note sustained for a long period of time whilst playing a piano part at the same time?

I think your note disappearing would be down to polyphony - the note is being 'stolen' as it is oldest.
As for the piano with a more realistic sustain with the sustain pedal, you might try adjusting the amp envelope so that it decays to zero (but still over a long time) rather than sustaining at a nonzero level.
