With all things in working order, this synth is spectacular!
Im a bit of a synth novice with some basic understanding of fm.
I am looking for any insight into how the cross mod depth, the sync switch, and different voice modes, poly and mono interact with each other.
Been experimenting with bell sounds noticing all the variations in sounds these parameters allow for (good and bad). Wondering if it has to do with the linear and exponential fm scaling.

Starting with sync, that makes the wave of VCO2 reset itself on the cycle of VCO1. That means you can adjust the pitch of VCO2 and it won't alter the note as such but it will radically alter the timbre.

Try this:

- Set VCO1 and VCO2 to saw on the same octave
- Mix them about equally, or mute everything but VCO2
- Set Sync on
- Use either the pitch knob of VCO2 or (my preferred option) the EG Int knob to let the envelope alter the pitch. Go up first for a kind of zap sound. This is the classic sync lead sound. Sounds huge with Unison voice mode and a bit of detune from the voice mode knob.

Cross mod is again a way of affecting VCO2 from VCO1. Turn Sync off to play with this as the effect is quite subtle with it on. Mix VCO1 and Multi out of the way and turn cutoff all the way up so you can see how it affects the oscilloscope.

You can get the phase of VCO2 to affect the frequency of VCO2. As you turn cross mod up you'll see VCO2's wave shape change subtly at first and then very obviously, and if you have VCO1 mixed up, it will start beating against VCO1. You can counteract this by pitching VCO2 down.

Try this with VCO1 set to different wave shapes and octaves to see how it affects the sound. I find it very useful to use Cross Mod as an extra audio-rate LFO that can get some subtle beating in the sound. Be aware that you can throw things out of tune outside of the range of notes you're testing with!

Mono is pretty boring except for the fact you can use the voice mode knob to add sub-oscillator to the mix. Turn up to halfway for a square wave oscillator one octave down, and up to full to add a second oscillator two octaves down. This is pretty useful up to the one octave but you'll end up with a lot of farting if you're playing low notes already and add in the -2 octave sub-osc

Hope some of this helps! Many people here will do better at explaining the tech but here's how I like to use what you mentioned.
