tracking out

I have both the emx and esx, they are great instruments for laying down a complete track, espeicially suited to minimal house. I'm happy using hardware. I'm just wondering how you guys track out to record, ie I suppose you can have 4 individual parts to post process via the outs if you hard pan left and right and the 3 and 4 outs. I want to do this in a daw and compare mixes from straight out of the tribes from stereo outs in an attempt to give the mix space. Also can someone commnet on swapping tubes in the mx it seems jj83s tubes give a smoother quiet7er responce, are the jj80s a step up from these?
