Store your SV-1 Flat
You may know this already, but be sure you store your SV-1 flat. I was informed that the key bed get wonky if you don't.

Turned out to be the humble power plug. And to file under the Category of Who Knew? - You can buy an adapter that allows you to use any extension chord for the unit - costs about $5 US. The faulty plug has been annoyingly short in many venues, and this solves that problem. Lovely to have my SV-1 ...

Watch those fingers
I will second the suggestion to check the "local off" button. Because of where that row of buttons is situated, it is pretty easy to punch any one of them unintentionally. I have not had too much of this, but it can be pretty jarring in the middle of the tune.

Phaser settings likely reflecting some classic unit
Not sure, but some of the settings reflect the behavior of classic stomp pedals and out board units. If that classic unit only has two settings, the dial will act the way you describe. Weird adjustments - the tremolo, too
I find a similar problem with the tremolo. I can't seem to find a sweet spot that does not sound jiggly in an unpleasant sort of way. I tend to use the Uvibe instead, though it is hardly the same thing. I need to go into the editor again, it seems, but I am not hopeful.
