I just want to play it directly into my MacBook. I have the M-Audio FastTrack but when I record it direct into my computer through the instrument input, it only records on mono. How can I do stereo?

That is because instrument input is actually mono, because it is designed for recording guitar or bass... M-Audio FastTrack doesn't have stereo line inputs so I don't know if you even can record stereo with it. http://reflex-records.co.uk/images/maftpro.jpg here is a M-audio FastTrack pro and as you can see in the front it has two neutrik jacks where you could plug in your keyboard's both channels and record them...

I don't know where you see that, but I'm lookign at a photo of the Fast Track Pro and all i see on the front are two mic inputs and a headphone jack with a bunch of knobs.

The inputs are dual-purpose; they'll work with both mic and 1/4" inputs. That's what a neutrik input is (as opposed to an input that just works with mic or just works with 1/4"). Run the left channel of your M50 into input 1 and the right channel into input 2. You should be able to set up the bus in your sequencer so that both inputs are recorded to the same track in stereo.
