In the FAQ I see automation is mentioned, but I can’t see anything about it in the manual. How can I automate so that, say, the volume of a track varies from scene to scene?

Tapping the Parameter Display Bar opens up all the automation choices for each scene. Its the one below the Note Display window (which by default shows note velocity).
