First of all, the Mk VII just doesn't sound nearly as good as the original Rhodes MK I, II and V. In certain ranges it sounds easily as unauthentic as many software solutions.
Second midi in does not play notes on an electromechanical device.
So there are only few solutions left.
The software standard is the Scarbee library (now sold by Native Instruments)
The hardware standard is the Korg Kronos, perhaps together with Yamaha's CP1 - and Burningbush's custom patches instead of the factory ones.
Besides the Kronos factory patches, BurningBush and I have provided some more custom patches. You find the links in the Kronos forum. And everybody with a Kronos can do his/her own first class Rhodes custom patches as well. Plenty of editing possibilities are available in the Kronos
Nothing can replace the original. But if you are happy coming close, with stepless velocity playing dynamics as high as from the original Rhodes, just use a Kronos.
Problem solved - at least from my view.
