How to record with the SV-1? Audio interfaces?

I am planning to buy a Focusrite Scarlett Solo to record guitar with. I am wondering if it's also a good audio interface to use with the SV-1. If not, what are your recommendations? What other ways are there to record the SV-1? I mainly play it live with an amp and have not recorded with it before.

The SV-1's sounds are best played, and recorded, using a stereo capable device. The acoustic pianos, in particular, will sound rather thin if a mono interface, such as the Focusrite Scarlett Solo, is used. A better bet would be the Focusrite Starlett 4i4. Although more expensive, it will be better suited to dealing with the recording of guitar and SV-1, including both at the same time.

The built-in audio interfaces on computers can be surprisingly good for recording external stereo instruments, but this is not a universal truth, as they can vary quite a lot.

An alternative is a stand alone multichannel recording device, such as a Zoom R16, which can record up to 8 tracks simultaneously, or a Tascam DP-006, that records two tracks at once.
