you could:
Jailbreak and use iFile.
Use iFunbox and a PC (no jailbreak required).

Maybe an iPad? Its a little tricky to get audio in & out (try a powered usb hub and any interface), but Beatmaker is an excellent sampler, and Loopy is an amazing looper. Mount it on a music stand ...
